- 1 box pineapple cake mix (prepare according to box put in pan)
- 1 large can crushed pineapple
- 2 instant coconut cream jello pudding according to directions (you can reduce milk by 1 cup to make thicker)
- 2 cups shredded coconut
- 1 vanilla frosting (ready to spread)
- 1 small tub cool whip
Mix cake mix and place in 9x13 pan. Bake as directed. When done, take wooden spoon handle and poke holes. Pour can of crushed pineapple over cake with juices(do not drain). Pour prepared coconut pudding on top of pineapple. Cool in refrigerator 2 hours. Add frosting layer, cool whip layer and sprinkle w/coconut. Garnish with strawberries, mandarin oranges, or cherries bcause presentation is everything!
